Louisiana isn't known for book publishing, but there are businesses you can go to to see your manuscript become a publication:
The house in Lafayette publishes biographies, cookbooks, sports books, etc., relating to south Louisiana. Titles include Blessed Be Jazz, No Baloney On My Boat!, and From Bags to Riches.
2) Acadian Museum Editing Services
Also in Lafayette, AMES provides editing, illustration, and publishing services to clients.
3) Admiralty Record Publishing Company
The publishing company/bookstore in Mandeville (near New Orleans) has published The Admiralty Record and Tom the Good Luck Black Cat.
Ally-Gator is a regional children's book publisher in Lake Charles. Titles include Lacie's Star, Sister Mary Button-Drawers, and Where's Roy?
5) Beau Bayou Publishing Company
BBPC was founded in 1985 in Lafayette and has published five books: Accident and Deception: The Huey Long Shooting; Blooming Trees & Shrubs; Cajun Cuisine; Jambalaya, Crawfish Pie, and File' Gumbo, and My Wars.

Also in Baton Rouge, Dalrymple began in order to help the professors at Louisiana State University. It has since published textbooks that are used in community colleges and four-year universities across the country.

15) Gulf Coast Legal Publishing
Also in New Orleans, Gulf Coast was founded with the goal of providing legal professionals and law students with reasonably priced, user-friendly books. Titles include Louisiana Code of Criminal Procedure and United States Bankruptcy Code.
Kingdom Publishers is located in forty states, and its Louisiana site is near the small town of Plaucheville. It is a Christian publisher/bookstore.

Lawrence is a Latin American law book publisher in Baton Rouge. Titles include Federal Civil Code of Mexico (English translation), New Civil and Commercial Code of Argentina (English translation), and Civil Code and Family Code of El Salvador (English translation).
18) LSU Press
This is the university press of Louisiana State University in Baton Rouge. Award-winning titles include The Man Who Punched Jefferson Davis, Reconstruction in Alabama, and Bad Girls at Samarcand.
Like Kingdom, McGraw-Hill has many locations across the country. Its Louisiana site is in Baton Rouge. Many of the textbooks you have used likely came from this company.
20) Pelican Publishing Company
Pelican Publishing in New Orleans is an imprint of Arcadia Publishing (based in Charleston, South Carolina). They publish regional books for children, regarding cooking, are holiday-themed, etc. Its current best-sellers are Cajun Night Before Christmas; In A While, Crocodile; and Impersonal Skill Set For Ministers.
PEN in Lafayette has titles, such as The Butterfly Effect, The Anatomy of a Book, and Adjusting Your Crown.
This company in New Orleans publishes eight in-house publications and multiple custom publishing for the area. It appears to be known for its cookbooks.
Its name may say otherwise, but they publish books for kids. It is located in Mandeville.
24) Tootle Time Publishing Co.
Unlike Spirit Wine, it's unsurprising that Tootle Time is a children's book publisher. Located in Cade (near Lafayette), its titles include the Mr. Tootles series.
25) UL Press
This is the university press of the University of Louisiana at Lafayette. It has books on Acadian and African-American history and culture, Louisiana history, and New Orleans. An upcoming book is Jean Lafitte Revealed.
26) UNO Press
This is the university press of the University of New Orleans. Titles include Can Feminism Trump Populism?, I Feel To Believe, and Democracy in Austria.
Wise Publications in Sulphur (near Lake Charles) also serves as a bookstore. They publish a wide variety of regional books in genealogy, theology, self-improvement, etc.
